In this entry I get to combine both my loves- food and charter boats! Charter Yacht Felicia made a big splash at the culinary contests this November in the British Virgin Islands, as well as unveiling their beautiful new paint job on the yacht and many other upgrades…

News 2012:

In January, Felicia went “flag blue” and in June, we added a beautiful custom-built hard top that looks like it came straight out of the factory. The new hard top has a larger platform, guests can walk (or dance!) on top, and it makes the cockpit cooler due to the thicker insulation and the connector panel which can open to allow cool air to flow into the space.

Additionally, we’ve updated all of the cabins with new larger flat screen TV’s. We have new teak cockpit chairs, new weather curtains, a new sunshade for the foredeck, and we’re in the process of replacing all of the salon blinds.

1st place winner in the Coffee Catetory at the 2012 BVI Charter Yacht Show,
Julie titled her entry “Cup of Joe Tiramisu”.
This dessert is served in an edible chocolate coffee cup, and layered with lady fingers dipped in coffee and Kahlua, fresh vanilla bean whipped cream, and homemade coffee ice cream.
It was garnished with spun sugar “steam” and Coconut Crisp cookies.
Make a simplified version of this recipe using your favorite store-bought coffee ice cream, Cool Whip, and ommitting the edible chocolate coffee cup:

1 Qt. Coffee Ice Cream
1 lg. pkg. lady fingers
Kahlua & strong coffee for dipping
1 lg. container Cool Whip
Chocolate for shavings garnish

In a springform pan or glass dish, start with 1 layer of lady fingers dipped in Kahlua and coffee mixture (50/50).  Spread with a layer of softened coffee ice cream.  Top wth Cool Whip.  Sprinkle liberally with chocolate shavings.  Repeat layers.  Freeze until ready to serve.
Thaw for 10-15 minutes before serving.

Nutella Cheesecake
Serves 12-14

CRUST:
1 1/2 C Oreo cookies – crushed into crumbs
2 T sugar
1/2 C unsalted, softened butter

FILLING:
1 8 oz. pkg. softened cream cheese
14 oz. jar of Nutella – room temperature
1 tsp. vanilla extract
1 8 oz. tub whipped topping

GARNISH:
1 C heavy cream
1 1/2 C semi-sweet chocolate chips
1 C toasted chopped hazelnuts

Prepare crust: mix ingredients, press into pan & bake 5-10 minutes in 300 degree oven.
Cool completely.
Mix cream cheese with Nutella. Add vanilla. Gently fold in whipped topping.
Pour into cooled crust.
Melt chocolate with cream – cool to room temperature. Pour on top.
Garnish with copped hazelnuts, chocolate shavings and dollops of whipped cream.

Alternate presentation – prepare Nutella mixture on its own & pipe into martini glass or an edible chocolate bowl. Use more whipped topping to lighten it as much as you’d like!

I have to say the Nutella Cheesecake looks absolutely wonderful and I believe I will probably be trying that one soon enough!
